Description
Experience vibrant spring flavors! This Würziger Bärlauch Hummus blends fresh wild garlic and creamy chickpeas into a smooth, zesty dip. Quick to make.
Ingredients
Scale
- 1 can (400g / 15 oz) chickpeas, drained and rinsed
- 1 cup packed fresh Bärlauch (wild garlic) leaves, roughly chopped
- 1/4 cup tahini
- 3 tablespoons fresh lemon juice
- 2 tablespoons extra virgin olive oil, plus extra for drizzling
- 1/2 teaspoon red pepper flakes (or to taste)
- 1/2 teaspoon salt (or to taste)
- 2–4 tablespoons cold water
Instructions
- Step 1: In a food processor, combine the chopped Bärlauch, tahini, fresh lemon juice, 2 tablespoons of extra virgin olive oil, red pepper flakes, and salt. Process for about 30-60 seconds until the Bärlauch is finely chopped and a thick, green paste begins to form.
- Step 2: Add the drained and rinsed chickpeas to the food processor with the Bärlauch mixture. Process for 2-3 minutes, scraping down the sides as needed, until the mixture is very smooth and creamy.
- Step 3: With the food processor running, slowly drizzle in the cold water, one tablespoon at a time, until the hummus reaches your desired light and fluffy consistency. You may use more or less water depending on your preference.
- Step 4: Stop the food processor and taste the hummus. Adjust seasonings as needed, adding more salt, lemon juice, or red pepper flakes if desired. Give it one final quick blend.
- Step 5: Transfer the "Würziger Bärlauch Hummus" to a serving bowl. Drizzle generously with extra virgin olive oil and optionally garnish with a small Bärlauch leaf or a sprinkle of red pepper flakes before serving.
